Ingredients: Chicken (cage-free), onions, mushrooms, garlic, and other veggies; large stir fry pot (see below)
Instructions:
Wash chicken and cut into inch squares
Marinate chicken with teaspoon of soy and tablespoon of cornstarch
Chop onions, mushrooms and garlic finely
Add canola oil to pot and sautee chopped veg, putting them aside when lightly browned
Add more canola oil and chicken marinade to pot
Spread out chicken squares and turn frequently, setting aside when cooked through
Add more canola oil and cook broccoli
Make thin gravy with cornstarch and water
Combine all above cooked ingredients and simmer together, add gravy.
Adjust with soy, garlic salt to taste
Best served warm over brown rice.
